Yucatan
This region represents the southern part of Mexico and provides a wide variety of recipes featuring black beans and pumpkin seeds combined with fresh meats and vegetables. The Yucatan menu includes regional dishes such as carnitas (pork shoulder smothered in achiote rub) and Tikin-Xic (stewed seafood with spicy chipotle sauce). This style of cuisine features meats rubbed in recado spices and smoked to perfection.
Puebla
This region in the central part of Mexico is known as the "Cradle of Corn" and is the birthplace to one of the country's most popular dishes, mole. The Puebla menu features regional specialties such as chiles rellenos (poblano peppers stuffed with cheese), pollo en mole (chicken with mole) and meat-stuffed tamales. This section of the menu offers a variety of items with meats slow-cooked in pots.
Veracruz
This coastal region of Mexico offers a great selection of dishes featuring seafood caught in the waters off of Veracruz. The Veracruz menu highlights popular dishes such as huachinango a la veracruzana (regional fish with spicy tomato sauce), escabeche (fresh scallops, calamari and baby rock shrimp steamed in Dos Equis beer and then chilled in a habanero-lime-orange-cilantro marinade) and fresh flour tortillas stuffed with marinated grilled shrimp with spicy tomatillo mayonnaise. This coastal cuisine changes based upon what fresh seafood is available by season.
